Every drink begins before the bar opens. All the syrups, infusions, and extracts you see here are made by hand. These recipes and ideas were created by mixologist Ippokratis Lazakis, who shared with us his methods and trained our team. His work is the base of our 2025 signature cocktails.

Saxo Bar has been a part of Ierapetra’s nightlife since 1991
Over the years, many people have come and gone behind the bar
But the spirit of Saxo has always stayed the same. A place where locals gather for good music, great drinks, and real connection.
We’re proud to say that we’re more than just a bar.
We’re also a stage — a space where local artists can share their love for music and where every night feels a little different. Almost every Friday, we host live performances that fill the room with energy, passion, and local talent.
Two years ago, we added something special — the first and only rooftop bar in Ierapetra. It’s the perfect place to enjoy a drink under the stars, surrounded by the sounds of the city and the sea.
